Baked Cornish Game Hens

  • 3 cornish game hens
  • 1/2 medium onion(s); chopped
  • 1 stalk(s) celery; chopped
  • 1/4 bell pepper; chopped
  • 4 ounce(s) mushroom(s); chopped
  • 1 garlic clove(s); minced
  • 1 tablespoon(s) basil; fresh, chopped
  • 1 teaspoon(s) oregano
  • 2 tablespoon(s) parsley; fresh, chopped
  • 3/4 cup(s) butter; melted

Stir 1/2 cup melted butter with onion, celery, bell pepper, mushrooms, garlic, and herbs. Season hens inside and out with salt and black pepper. Stuff birds with equal amounts of the vegetable mix. Place birds in baking dish, breast side up. Drizzle with remaining 1/4 cup butter. Cover and bake 1 1/2 hours at 325°F. Brown at 500°F.
