Arroz Con Pollo

  • 1/2 cup(s) olive oil
  • 1/4 cup(s) tomato sauce
  • 1 chicken (3-4 lb)
  • 1 small onion(s); chopped
  • 2 1/2 cup(s) chicken broth
  • 1 garlic clove(s); minced
  • 1 cup(s) rice; uncooked
  • to-taste black pepper; ground fresh
  • to-taste salt

Heat oil, brown chicken on both sides. Add onion and garlic, fry a few minutes, then add tomato sauce, chicken broth, salt and pepper. Cover and cook for 20 minutes. Add rice, stir well, cover again and simmer for 30 minutes longer, or until all liquid has been absorbed and chicken is tender.

Yield: 6 servings
