Baked "Fried" Potatoes

  • 4 large potato(es)
  • 2 tablespoon(s) olive oil
  • 1 teaspoon(s) paprika
  • 1/2 teaspoon(s) salt

Scrub 4 large (8-10 oz) potatoes. Cut each in half lengthwise. Cut each half into 4 spears. Place potatoes in large pot of lightly salted boiling water, bring water back to boil and boil 3 minutes. Drain in colander.

Mix olive oil and potatoes in bowl. Mix paprika and salt together, toss over potatoes. Mix well. Bake in preheated 400°F oven for 15 minutes or until tender.

Place in paper towel lined basket or bowl. Serve hot.

Makes 4 servings Can add other spices to salt mixture for different flavors.
