Mel's Diner Chicken Cilantro Soup
- 4 chicken breast(s); cooked, chopped
- 2 can(s) chicken broth
- 2 can(s) tomato(es); chopped
- 4 tablespoon(s) cilantro; chopped, fresh
- 1 medium onion(s); sliced, sauteed
- 1/2 teaspoon(s) black pepper
Bring all ingredients to a boil. Simmer 45 minutes to 1 hour. Serve soup over a thin layer of crushed taco chips in bottom of soup bowl. Add grated Monterey Jack Cheese on top.
