My Quick Scalloped Potatoes

  • 5 medium potato(es)
  • 2 medium onion(s)
  • 3 teaspoon(s) salt
  • 3 tablespoon(s) flour
  • 3 tablespoon(s) margarine
  • 2 1/2 cup(s) milk
  • 1/8 teaspoon(s) black pepper
  • 1/8 teaspoon(s) paprika

Preheat oven to 400°F. Peel and slice onions. Peel and slice potatoes. Cover with hot water and add 2 teaspoons salt. Bring to boil and cook 5 minutes. Drain and put in a greased casserole.

Mix margarine and flour in microwave safe glass measuring cup. Microwave 1 minute. Add milk slowly whisking to keep lumps from forming. Add 1 teaspoon salt, pepper and paprika. Microwave stirring occasionally until cooked. Makes fairly loose sauce. Pour over potato/onion mixture in casserole and bake for 35 minutes.
