Mediterranean Cauliflower Salad
- 1 head cauliflower flowerettes
- 1/4 cup(s) bell pepper, red; chopped
- 2 tablespoon(s) parsley; chopped
- 1 tablespoon(s) capers
- 1 tablespoon(s) red wine vinegar
- 3 tablespoon(s) olive oil
- 1/2 teaspoon(s) oregano; dried
- to-taste salt and black pepper
Steam cauliflower floweretts until just tender. Refresh under cold water to stop the cooking process. In a bowl, combine cauliflower, pepper, parsley, and capers. Toss lightly. Whisk together vinegar, oil and oregano. Pour over vegetables. Marinate in the refrigerator for two hours or overnight. Serve cold.
